Soybean Paste Stew

For those of you who are always wondering what to do with tofu, here is a great recipe that will both be satisfying and warm to the SEOUL =)  You can keep it completely vegetarian by following this recipe or add a little pork if you are a carnivore!  Here is my soybean paste stew recipe!

Ingredients:

  • Soybean paste (get this in any Korean grocery h-mart or lotte)
  • Soft tofu (1 package)
  • One small zucchini (diced up into cubes)
  • One small yellow onion (diced up into cubes)
  • Thai pepper or jalapeno peppers (optional)

All you need is a medium sized pot. Add half a cup of water and bring it to a boil.  Add three tablespoons of soybean paste into the water and stir it around.  The water should turn a brownish color.  If you want meat, this is where you would also want to add half a cup of chopped up pork, otherwise skip this step.  Now add in diced up zucchini and onion.  Mix it around with a large spoon.  Cut up half a package of tofu into cubes (or the whole thing if you want a LOT of tofu).  Add a cup of water along with the tofu into the zucchini and onion mixture.  Cover the pot and bring it to a boil.  Once it's boiling, stir it up and add chopped up Thai pepper or jalapeno peppers for additional heat, otherwise skip this step.

Let the stew boil for about another 5 minutes on medium/high heat. So easy!  Enjoy with a bowl of rice or quinoa.  I like to enjoy with a mixture of rice and quinoa.  Whatever is your cup of tea!
