Chi-Pork Cilantro Meatballs with Cauliflower Parm

I had never done this before and thought, why not give it a try?! I combined ground chicken breast and ground pork (chi-pork) to make these amazing meatballs. I have made them again and again, each time a little differently to play around with flavor and variations. Very tasty, super simple and jam-packed with tons of protein. Here are the ingredients:

-half pack ground chicken breast

-half pack ground pork

-garlic powder

-salt and pepper

-cilantro

Mix all of these ingredients together into a large bowl. Be generous with the garlic powder and cilantro. I sprinkle in about a teaspoon of salt and pepper. Mix it really well so the chicken and pork is blended together. Then take a quart size zip-lock bag and make an inch cut in one side of the bottom corner. Put the mixture into the bag and close it. Squeeze out meatball sized portions into a large pot of boiling water or chicken broth. Let it boil for about 5 minutes and then scoop them out. Get creative! You can also make soup using these, I tried it recently and was excited. If you are interested in making soup, just add any vegetables you like into chicken broth and let them boil for 10 minutes before adding any meatballs or noodles.

As for the cauliflower, again it's really simple. Break up cauliflower into edible pieces. Then boil pieces in a pot of water. Boil with cover for 10 minutes. Then drain and mix in salt and pepper to taste, fresh parmesan and a little bit of olive oil. Toss it around and it's done.

I am always playing around with the ingredients when I cook. Get adventurous and throw in some chive or even a little hot sauce for extra heat. You can eat just the cauliflower with meatballs if you are trying to watch your carb intake, otherwise I like to eat this dish with a little bit of brown rice. Either way I feel fueled and energized after eating this. Get your grub on and enjoy!
