Super Clean Quinoa

Read on for Katherine's recipe for a simple, fresh and healthy quinoa that will have you thinking springtime even in the coldest weather!
Super Clean Quinoa
For the salad:
4 cups cooked quinoa (any kind you like)
2 cups fresh baby spinach
1 cup chopped tomato (1 large)
1 cup chopped mini cucumber
1/2 cup chopped fresh basil
1/8 cup chopped fresh mint
1/4 cup thinly sliced red onion (or more, if you're into onions)
salt and pepper to taste
For the dressing:
1 1/2 TBS fresh lemon juice
2 TBS olive oil
salt and pepper
*Add chopped chicken and feta, or flaked salmon filet for even more protein and some healthy fat
